Do it yourself! It’s dead easy and you’ll be very pleased with the results. No cooking or ice cream machine required. I made this while at the cottage and it was the perfect ending to a long day in the sun.
No-Churn Coffee Ice Cream
1 300ml can sweetened condensed milk
1 tbsp vanilla extract
1/2 cup strong coffee, chilled
2 cups cold heavy cream
In a medium bowl, stir together the condensed milk, vanilla, and coffee.
In a separate bowl, whip cream with an electric mixer until soft peaks form. You can do it by hand, but you’re in for quite the workout if you do.
With a rubber spatula, gently fold whipped cream into condensed milk mixture until incorporated. Pour into a 9×5-inch loaf pan, cover with plastic wrap and freeze until firm, about 6 hours or overnight.
