Burrata with Roasted Tomatoes


I have the best neighbours! They're wonderful company and are always willing to try out my new recipes. Sometimes the simplest of things are the best. Good food and good company make for a great evening.

Have you ever tried burrata? It's a fresh mozzarella cheese that's formed into a pouch with soft, stringy curd, and cream. It's heaven. Burrata literally translates into "buttered", which is a glimpse into it's lovely flavour and texture. It can be difficult to find, look for it in Italian and specialty cheese shops or larger grocery stores.

Burrata with Roasted Tomatoes

1 ball burrata

1 pint cherry tomatoes

1-2 cloves garlic, peeled and roughly chopped

olive oil

salt & pepper

1 small bunch basil, chopped

Preheat the oven to 350F. Toss the cherry tomatoes and garlic cloves with 1-2 Tbsp olive oil, spread over a baking sheet, season with salt and pepper, and roast in the oven for 15-25 minutes (depending on how large your tomatoes are).

Plate the burrata and surround with tomatoes. Drizzle with fresh olive oil. Season with salt and pepper. Garnish with chopped basil.
