Leek and Goat Cheese Quiche

Celebrating with pie is a must on such a joyous occasion. To 100% honest I would love nothing more than to make a sugar pie, or even a raspberry pie, but since I decided to give up junk food for Lent and since I am now only 6 days in to my 40 day stint I think it would be a fatal move to make sugar pie. Note to self, make a sugar pie to make up for the lack of sugar in tonight’s pie when lent is over.

 

There are so many foods that come in pie form; regular pie, hand pie, pie pops, spinach pie (spanokopita), pizza pie, chicken pot pie, meat pie (yuck), pasta pie (also sometimes known as spaghetti pie), shepherds pie (*shudders*)…. Quiche?? Is quiche a pie? You use pie crust, you make it in a pie plate, and you serve it up in slice form just like a pie. I am going to go ahead and say YES.

 

To celebrate Pi Day in my own way I decided to make a quiche. Today was a beautiful day in Ottawa! As far as I am concerned it was the first sign that spring is actually on its way. The sun was bright, the air was warm, and I actually had the urge to go for a run. So I did! Before I made my lovely spring quiche I went for a 7k run along the canal to Lansdowne Park and back. It was so good that I might even do it again in the days to come.

 

I think this might be the best quiche I have ever made. It’s absolutely delicious! I found this recipe online and adapted it a little to suit myself. As for the crust, I will try a new recipe next time… since I messed around with two very different recipes to make two very different dishes. All this to say… maybe don’t use this crust recipe, even thought it turned out well.

 

Leek and Goat Cheese Quiche

 

3 small leeks, whites and light green parts, halved and sliced thinly

4 eggs

¾ cup half and half cream

1 small package goat cheese (4 oz?)

¼ tsp salt

¼ tsp cracked pepper

1/8 tsp nutmeg

 

All butter Crust

2 cups flour

¾ cup butter, cut into small pieces

1 egg

¼ tsp salt

¼ cup cold water

 

For the crust, mix the flour and salt in a bowl. Cut in the butter until it looks like large oatmeal then add the egg and water. Mix with a folk and then pour onto the counter and proceed to bring the dough together by hand. Roll out the dough and fit it into your pie plate.

 

For the filling, beat eggs a little and then pour everything else in. Mix well until everything is combined and then pour into the crust.

 

Bake at 375 for 40 minutes. Let cool 5 min.
