Just two posts ago I was telling you about my love of canned tomatoes. This recipe is a whole lot of canned tomato goodness. Super duper simple and very tasty, perfect for a Wednesday night after hitting the gym hard
My mother sent me this recipe a month or so ago and I have made it three or four times since, I think that says enough about how yummy it is. Below is the unedited version she sent me <3
1 1/2 tablespoon butter
6 green onions, chopped
1 clove garlic, minced (or pressed)
3 cups tomatoes, peeled & chopped (1 796 ml can chopped tomatoes)
1 1/2 cups chicken broth (warm it in microwave)
1 tablespoon lemon juice
1 1/2 tsp. sugar
salt & pepper to taste
Melt butter and cook onions for 3 minutes.
Add garlic for last 30 seconds with onions.
Add tomatoes and cook 5 minutes.
(the burner was closer to medium than high)
Add chicken broth, lemon juice & sugar.
Add salt & pepper to taste
Cover and simmer 5 minutes*
*I turned burner to low (almost minimum) and let it come almost to boil.
Do not boil.
Note - mom and I enjoy sprinkling this with frozen cilantro flakes
