Celery, Date, & Walnut Salad

A delightfully crisp salad that hits all the notes – sweet, salty, crunchy, creamy, zingy. It’s the quickest of salads and will have you coming back for more! The best part is that I almost always have the ingredients on hand.
The recipe below is for one person who wants to eat an entire plate of celery for lunch, or a small side dish for two. I would double it if serving as a side dish for a few.
Celery, Date, & Walnut Salad
4-5 ribs celery
2 T olive oil
2 T fresh lemon juice
2T finely minced shallot (sub white onion)
2 heaping tablespoons finely grated parm (sub other hard salty cheese)
¼ cup dates, sliced thin
1 small handful walnuts (sub pecans)
Salt and pepper to taste
Combine the shallot, sliced dates, pinch of salt, lemon juice and olive oil in a medium bowl, whisk with a fork until combined. Let sit while you slice the celery.
Slice the celery very finely and on an angle and add to the bowl along with toasted walnuts and Parmesan cheese. Toss to combine.
Taste for lemon, oil and salt, adding more if necessary. Enjoy
