I've got to say, one of my absolute favourite things about the current stay-at-home order, is that I am guaranteed to be home for that 15 minute window when my avocado is ripe. I don't mean to brag, but I haven't missed a single avocado window in weeks! #winning
There are a lot of things to like about this salad. It is incredibly fast and easy to make. There are a variety of textures and flavours to enjoy. It's so fresh and green that it is bound to brighten any winter day. Apparently this recipe services two, which checks out, as the internet tells me that a serving size for avocado is 1/3 of a medium-sized one. But, I ate the entire bowl by myself and regret nothing.
Avocado & Cucumber Salad
3/4 to 1 pound seedless cucumber, washed and chopped into chunks 2 thin or 1 regular scallions, thinly sliced 1 large avocado, pitted and diced 2 tablespoons mayonaise Juice of half a lime, plus more to taste Salt and hot sauce (we used Sriracha) to taste Chopped cilantro or flat-leaf parsley to garnish
Combine cucumber, scallions and avocado in a bowl. Whisk together mayo, lime and seasonings, adjusting levels to taste. Drizzle salad with dressing and garnish with cilantro or parsley. Repeat again tomorrow.
