Aperol Spritz


Today was a weird day. I had an itch that I just could not scratch. I had a craving for something, but couldn't quite figure out what it was. I tried sweet, salty, sour, savoury, fresh, starchy, fatty, hot, cold, room temp - nothing could satiate me. And then it occurred to me, bitter! Bitter foods aren't appreciated much in western cuisine, but they're starting to catch on via double IPAs, black coffee culture, and kale salad. Aperol and Campari are both Italian liqueurs with a bitter flavour, that are traditionally consumed to stimulate the palate before eating. Though I didn't need to stimulate my palate before eating even more, I did find that the slightly bitter taste of cocktail very satisfying. What's more, because Aperol is a liqueur it's also quite sweet, so when mixed with the effervescence of prosecco it becomes a delightfully refreshing drink.

Aperol Sprtiz

chilled prosecco

Aperol

Chilled soda water

Ice Cubes

Slices of orange (optional)

Fill tall balloon or wine glasses generously with cubed ice

Combine Prosecco followed by Aperol in equal parts

Add a splash of soda

Garnish with a slice of orange
