Honey Mug Cake


Because sometimes you just need a little cake in your life. Like this morning at 9am for instance.

Mug cakes are genius, whoever figured this trick out deserves an award! You know when you just want something sweet but don't want to have an entire batch of cookies or an entire cake keeping you company while you spend your days working from home - yeah, I know that feeling too. Mug cakes are here for you. Simply stir a few ingredients together and then pop in the microwave for 1 minute and 20 seconds and BAM, warm cake. I chose whipped cream as my topping because it was 9am and I was lazy, but by all means consider a buttercream frosting - check out the recipe for that here. I also think a scoop of ice cream would be an excellent option too.

Honey Mug Cake for One

2 tbsp butter

2 tbsp runny honey (heat a little if not runny)

1 medium egg

½ tsp vanilla extract

2 tbsp light brown sugar

4 tbsp flour

¼ tsp baking powder

pinch of salt

Add the butter to a mug and melt in the microwave for around 10-20 seconds.

Add the honey, egg and vanilla and beat with a fork until combined.

Add the sugar, flour and salt and beat again until fully combined and smooth.

Cook in the microwave for around 1 minute 15 seconds to 1 minute 30 seconds (depending on your microwave power), then allow to cool to room temperature. Less time results in a more pudding-like cake, more time a more solid cake.

Top with whipped cream, honey, buttercream frosting, or ice cream.
