White Bean & Garlic Scape Dip


This little number takes all of 5 minutes to make. Simply blanch the scapes (for a more subtle garlic flavour) and then blend with the other ingredients until smooth. It's the perfect snack when hunger hits or when surprise company comes knocking at your door. I halved the recipe below, using only one can of beans and about 5-6 garlic scapes. It turned out really well!

If you enjoy a more intense garlic flavour, then don't boil them in hot water, just blend them into the other ingredients completely raw.

Try adding a few tablespoons to a kale or collard greens leaf (massaged lightly, rib removed) and then roll it up for a great snack.

White Bean & Garlic Scape Dip

1 cup garlic scapes, cut into 2-3 inch pieces (about 10-12)

2 15-oz cans white cannellini beans, drained and rinsed

1/4 cup extra virgin olive oil

1/4 cup water

1/4 cup chopped fresh parsley

kosher salt and pepper, to taste

Bring a large pot of water to a boil and set out a bowl of ice water. Add the garlic scapes to the pot and boil for 30 seconds. Drain and plunge the scapes into the ice water. Roughly chop most of the scapes and finely chop one for garnishing the dip.

Add the garlic scapes, white beans, olive oil, water, and parsley to a food processor (or blender) and process until smooth. Add more water if it's too thick. Taste the dip and add salt and pepper to taste. It will need a few god turns of salt!

Serve topped with some garlic scapes, chopped parsley, another turn of salt, and a drizzle of extra virgin olive oil.
