Peach season is one of my favourite times of the year. Those fresh, juicy peaches that drip sticky nectar down your arm as you bite in are the best. Unfortunately, if it's peach season that means it's also pretty much the end of basil season. They overlap ever-so-briefly and possibly for one reason alone - peach, basil & jalapeno toasts.
This recipe has the killer combination of creamy, spicy, and sweet. It's bright and refreshing and comes together in a jiff.

Peach, Basil & Jalapeno Toast
1 slice of bread
1/3-1/2 cup ricotta cheese
1 peach sliced
1/2 jalapeno, thinly sliced
basil leaves, torn or thinly sliced
1 Tbsp white balsamic vinegar
1/2 Tbsp olive oil
Toast your bread. While it's toasting, let the peach and jalapeno slices marinate in the vinegar and olive oil. Top the toast with the ricotta cheese, then layer on top the peaches and jalapeno. Top with basil leaves. Enjoy.
