Happy New Year everyone! This healthy and delicious smoothie is how I decided that start the new year, okay okay, it's how I started the new year after getting out of bed around 10:30am and promptly eating a thick slice of french toast with maple syrup and a side of jalapeno & cheese curd smokies. It's all about balance!

Green-Orange Creamsicle Smoothie
1 cup light coconut milk
½ cup + a splash orange juice
½ cup baby spinach
1 heaping Tbsp avocado
¼ tsp vanilla extract
2-3 large pitted Medjool dates
3 ice cubes
In a high-speed blender, combine all the ingredients and blend on high until smooth. Taste and adjust the sweetness, is desired.
Tip – if your dates are on the dry side, try soaking them in boiling water for 20-30 minutes before making this smoothie.
