Pimento Cheese & Prosciutto Biscuits


They don't look like much, but man are they tasty. In my opinion the crispy prosciutto is 100% skip-able, there is already so much salt from the cheese it's just not necessary - so I'm going to remove it from the recipe below.

what you need to know

1. pimento cheese is freakin delicious! I will definitely be making it again, but most likely just as a cheese spread for crackers.

2. this biscuit recipe is really great. It's super easy and make a light, fluffy, Red Lobster-esque biscuit.

3. If you can't find pimento peppers, substitute roasted red bell peppers.

4. I made a half recipe of the pimento cheese and found it to be more than enough.

Pimento Cheese Biscuits

10 small drop biscuits

About 1 cup pimento cheese

Spread each biscuit with a heaping tablespoon of pimento cheese. enjoy!

Drop biscuits

2 cups all-purpose flour

1 Tbsp baking powder

2 tsp granulated sugar

1/2 tsp cream of tartar

A heaping 1/2 tsp salt

1/4 tsp baking soda

8 Tbsp butter, chilled and cut into small pieces

1 1/4 cups buttermilk (I made mine with lemon juice, check out this website to learn how)

Preheat the oven to 450°F

Whisk together the flour, baking powder, sugar, cream of tartar, salt, and baking soda in a large mixing bowl. Cut in the butter with a pastry blender or fork until the mixture resembles coarse crumbs. Add the buttermilk and gently toss the liquid and dry ingredients with the fork just until everything is blended and a soft, sticky, loose dough forms.

Form biscuits by loosely shaping dough into blobs with two large spoons and dropping the blobs onto a parchment lined baking sheet, spacing them about an inch apart. Bake for 18-20 minutes, or until browned on top.

Pimento Cheese

1 pound sharp cheddar cheese, grated (ideally you'll find it, but if you can't a very old cheese will work)

1 1/2 Tbsp finely grated white or yellow onion

1 Tbsp worcestershire sauce

6-10 dashes Tabasco sauce (or other hot sauce)

2 garlic cloves, minced

1 4-ounce jar of diced pimentos with juice

1/8 tsp lemon pepper (or 1/4 tsp fresh lemon zest and a few dashes of pepper)

1/4 cup + 2 Tbsp mayonnaise

Combine all ingredients in a large mixing bowl, mashing with a fork to form a thick, spreadable paste; if it's a bit loose, add more mayonnaise until it holds together.

Season to taste, and serve with crackers.

Makes about 3 cups.
