Apple, Zucchini & Oat Waffles


Do ever you find there is a soundtrack playing in the background of your life? Songs that seemingly appear from thin air and add to whatever it is you're doing? For example, while trying to zip up an overloaded piece of luggage recently I caught myself singing Pressure! pushing down on me pressing down on you... under pressure. Yeah, Bowie is in my head on a regular basis. Surprisingly though, last Sunday Lionel Richie snuck into my kitchen while I was making these waffles, they're easy like Sunday morning. Promise! And what's even better is if you whip them up on the weekend and freeze them, they can be easy like Monday morning too! Just pop one in the toaster and you're all set.

I really like this recipe because it's a great way to use up apple and zucchini that might be kicking around in the crisper at this time of year, no additional sugar is required (you'll be adding maple syrup anyway so who needs it?!), and the oatmeal gives the waffle an excellent texture.

Apple Zucchini Oat Waffles

1 cup Oats

1 1/2 cups flour

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/2 tsp nutmeg

3 eggs

1 1/2 cups milk or buttermilk

4 Tbsp butter, melted

1/2 cup shredded zucchini

1/2 cup shredded apple

Whisk together oats, flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a large bowl. Add eggs, buttermilk, and melted butter and whisk until well combined. Stir in shredded zucchini and apple. Batter can be made the night before and stored in the refrigerator.

Cook in a waffle maker until crisp and golden. Serve immediately with butter and honey or maple syrup, or with a poached egg?
