Beet & Berry Smoothie


One beet smoothie to rule them all!

Aren't you just loving those these warm, sunny summer weekends!? Weekends are a time when I can really unwind; make a nice smoothie, work on my downward dog, and soak up some vit D. Ahhh. Life is good.

There is a lot going on in this smoothie! This recipe is a really great way to get some veggies into your morning routine, if like me you struggle with that. I discovered it at the Live The Smart Way Expo, where they were sampling it at the Sobeys booth. They called it a Beet & Berry Detox Smoothie, but I can't stand the word detox, so I dropped it from the title. This recipe makes 5 smoothies, so think I tried to halve or third it and it turned out just fine. I also think using all coconut or all almond milk would be okay.

Beet & Berry Smoothie

1 cup fresh beet, grated or pureed

1/2 cup almond milk, unsweetened

1/2 cup coconut milk

1/2 cup plain yogurt

1 cup mixed red berries

1 frozen banana

1 cup orange juice

1 tbsp maple syrup

Combine all ingredients in a blender until smooth.
