Oh watermelon! I simply never cared for it. But about a year or so ago I was talked into a watermelon libation by a persuasive barkeep and it completely changed my mind about that fun colored fruit, with its terrible texture and underwhelming taste. So, when a girlfriend of mine raved about a watermelon mojito she made over the weekend I knew it was time to give watermelon another go.
This is a delightful drink for a hot summer afternoon, but next time I make it I’ll muddle more and then strain everything out. The recipe I followed below was rather chunky and therefore a little unpleasant to drink.
Watermelon Mojito
2 watermelon chunks
1 lime, juiced
2 tsp sugar
Mint leaves
2 oz white rum
Ice
Ginger ale
Muddle 2 watermelon chunks with the juice of 1 lime and 2 teaspoons sugar in each glass. Stir in a handful of mint leaves, then add 2 ounces white rum and ice. Top with ginger ale; garnish with more mint.
