Hot & Sour Soup


I’ve been at home sick for days :(

There is no amount of Netflix binge watching that can make my throat feel better or make me happy about missing out on sunny fall days. There is one thing though that makes it all a little easier to take; hot and sour soup. This soup is delicious and comforting, and it’s also nearly as good as ordering in. I'd eat it any day of the week, but it's especially nice when I'm sick, since it seems to help with a sore throat and it also feels like a treat.

Hot and Sour Soup

4 cups broth, I used chicken

4 ounces shiitake mushrooms, thinly sliced

1 (8-ounce) can bamboo shoots, drained and thinly sliced

1 can baby corn, drained and cut into 1” pieces

8 ounces firm or soft tofu, drained and sliced in 1/4-inch strips or cubes

2 cloves garlic, minced

2 teaspoons ginger, grated

1/3 cup rice vinegar

2 tablespoon chili sauce, I used sriracha

3 tablespoons soy sauce

2 tablespoons corn starch

2 tablespoons cold water

2 eggs, lightly beaten

2 teaspoons toasted sesame seed oil

green onions, sliced

Bring the broth, mushrooms, bamboo shoots, tofu, garlic, ginger, vinegar, chili sauce, and soy sauce to a boil in a large sauce pan over medium-high heat, reduce the heat and simmer for 5 minutes.

Mix the cornstarch and water together, making sure there aren’t any lumps, and stir into the soup. Simmer until it thickens, about 2 minutes.

Slowly pour in the eggs in a thin stream while stirring the soup.

Drizzle on the sesame oil and garnish with green onions. Feel free to add more vinegar or chili sauce if it’s not hot or sour enough.
