I love Vietnamese food! Pho, a rice noodle soup with a beef or chicken broth, is one of my favourite things to eat, though I am rather picky about where I go to have it since some pho is much better than others. If I had it my way, I’d head over to my friend Van’s mom’s place whenever I got a craving; she makes the best pho I think I’ve ever had. But enough about hot soup, it’s too warm out today to be thinking about soup. Avocado shakes are a special treat I occasionally allow myself to have when at a pho restaurant, I say occasionally because they are very rich, they're really more of a dessert than anything else, and only come in one size- too big!
I almost always have avocados on hand and had some extra sweetened condensed milk kicking around this afternoon too, so an avocado shake just made sense. But if I were you, I wouldn’t be too cautious about opening a whole can of sweetened condensed milk just for this recipe, it’s worth it! And the leftovers from the can be stirred into your morning café.
Vietnamese Avocado Shake
1 cup ice cubes
1 ripe avocado
½ cup milk
½ cup sweetened condensed milk
Add all ingredients to a blender and blend until smooth. If it’s too thick add a little more milk.
