Once in a while I am reminded of the good and simple foods that I love to eat, but am constantly forgetting are even an option. This is one of my absolute favourite snacks, especially when it’s hot outside. The celery’s cold, crisp texture is a perfect pairing for the creamy blue cheese filling. It’s very simple and only takes a few minutes to put together.

Cream cheese

Mix cream cheese and blue cheese in a 2 to 1 ratio, two parts cream cheese with one part blue. Fill the middle of a clean piece of celery.
