This isn’t just any banana bread; it’s a spelt and flax seed banana bread. Although the texture is a smidge off, due to the spelt flour, this is still an excellent loaf.
Chocolate Chip Banana Bread
3/4 cup of butter
1 cup of organic cane sugar
3 ripe bananas, mashed
2 tsp vanilla
2 large farm fresh eggs
1/4 cup buttermilk
2 cups spelt flour
1 tsp baking soda
1 tsp baking powder
1 cup of chocolate chunks
1/2 cup flax seeds
Cream the butter and sugar in a large bowl. Stir in the banana, vanilla, eggs, and buttermilk. Sift in the flour, baking soda, and baking powder, then stir. Fold in the chocolate and flax seeds. Pour into prepared bread pan and bake at 350 for 60-70 minutes (or until a toothpick can come out clean)
