Potato, beet & bean salad


I have a new guilty pleasure and it comes in the form of food videos. Most of you are well aware of places like pinterest and foodgawker where you can go for your food porn fix, but have you ever seen any cute little videos like this? Kitchen Vignettes has become a new source of food inspiration for me. I would have never thought to put this combination together. Never ever. But it works! This is a tasty little salad that is very simple to make and will go well with most anything.

Potato, beet & bean salad

1 to 2 pounds baby potatoes

1/2 pound fresh beans

4 beets (golden or chioggia)

2 to 3 green onions

1 bunch of fresh dill

Honey Dijon Dressing:

1 tbsp whole grain dijon (or regular)

1 tbsp honey

2 tbsp apple cider vinegar

1/2 cup olive oil

1 tsp crushed garlic

Salt & Pepper to taste

Steam the veggies. Note – I put the beets in first, steamed for a few minutes and then put the potatoes in, steamed until they were both almost done and then in the last few minutes added the beans. Chop into chunks.

Chop onions & dill finely.

Shake up the dressing, pour and mix all together.
