
A simple and quick summer dinner – for those nights when you want something tasty that won’t heat up the whole house. Makes enough for two.
Tuna & Tomato Salad
1 can tuna, drained
2 tbsp olive oil mayo
1 carrot, grated
1 stalk celery, grated
2 green onions, minced
S&P to taste
3 ripe tomatoes, I used three colors
4 basil leaves, cut into ribbons
Extra Virgin olive oil
S&P to taste
Mix all the first 6 ingredients together and set aside. Slice the tomatoes so that you get 4 good sized slices from each one. Arrange 6 slices around the outside of each plate (two plates). Take half of the tuna mixture, shape into a ball, and place in the middle of the tomato slices. Drizzle the tomatoes with olive oil, sprinkle with basil leaves and top with salt and pepper.
