This recipe has been in the family for many years. It’s a fantastic way to use up all the cucumbers we find in the garden. It always turns out well and is very pretty.
Cucumber Salad with Lime Dressing
1 english cucumber or 4-5 small/medium cucumbers from the garden
¼ cup lime juice
2 tbsp vegetable oil
2 tbsp white wine vinegar
2 tbsp water
1 tbsp sugar
¼ tsp salt
¼ tsp pepper
Dash of hot sauce
1 cup onion, sliced finely
Score the cucumbers lengthwise with fork tines.
Slice thinly crosswise. Place in a mason jar.
In a small saucepan combine lime, oil, vinegar, water, sugar, salt, pepper and hot sauce. Bring to a boil, stirring. Reduce heat and simmer for 2 minutes. Pour over cucumbers and mix well. Let cool.
When cool , add onion and stir well. Cover the jar with a lid and refrigerate for a few hours.
