I am Canadian, I love cheese, macaroni is good to… it just made sense.
Kala was on her way over for dinner and I had all the fixins for Mac & Cheese. Everyone is in town for Canada Day and we need some solid food in our tummies if we are going to make it though the next 5 days! Yes, you read that correctly. We have 5 epic days in a row lined up.woohoo
I was fortunate enough to be in La Bottega last week and they had “cheese ends” for sale. Yum! Mozzarella, provolone and who knows what else all vacuum sealed together at a price that could not be beat. I bought two!
Mac & Cheese
¼ cup butter
¼ cup flour
2 cups milk
3 cups elbow pasta
2 tablespoon mustard
2-3 cups grated cheese
½ cup bread crumbs
3 tablespoons butter melted
S&P to taste
Pre heat the oven to 350
Cook the pasta in a large pot of salted water until slightly undercooked. Meanwhile melt the ¼ cup of butter in a medium sized pot. Add the flour and whisk until a rue is formed. Continue to cook for another minute. Slowly add a little bit of the milk to the rue while whisking constantly so that lumps don’t form. Continue until all the milk has been whisked in and cook for another 3-5 minutes stirring occasionally until the mixture becomes thick.
Remove from heat and stir in the cheese and mustard until melted. Add the cooked pasta to the cheese sauce and stir well.
Turn into a greased baking dish or pie plate.
Combine the bread crumbs and melted butter and sprinkle on top of the mac & cheese right before popping it into the oven for about 20-30 min. You’ll know when it’s ready. Cheese smell will perfume throughout your house and the top will be golden brown!
