It’s Easter weekend, the weather is gorgeous and I am feeling like I am in need of something lemon! Doesn’t lemon just brighten up everything? Your kitchen when placed in a bowl, your water when squeezed into it, your food when added as a garnish, your face when you are hit with that sweet/tart shock when biting into something lemon flavored.
I didn’t use to enjoy lemon at all but in the last 2 years it has become one of my favourite flavors. *real lemon that is* My mom has been raving about this lemon square recipe for months now, about how delicious it is and how simple it is. It was high time I gave it a try and I was pleasantly surprised.
They are fantastic! Bursting with lemon flavor and just the right amount of sweet combined with a shortbread crust; they are like sunshine in your mouth.
Lemon Squares
1 cup flour
½ cup butter, soft
¼ cup powder sugar
1 cup sugar
2 tsp lemon peel, grated
2 tbsp lemon juice
½ tsp baking powder
¼ tsp salt
2 eggs
Powder sugar
Heat oven to 350 degrees.
Mix flour, butter and powder sugar in a bowl and press into an ungreased 8×8 or 9×9, building it up ½ an inch around the edges. Bake for 20 minutes.
Beat granulated sugar, lemon juice, lemon peel, , baking powder, salt and eggs with an electric mixer on high speeds for 3 minutes or until lights and fluffy. Pour over the hot crust.
Bake 25-30 minutes or until not indentation remains when touched lightly in the center. Let cool and dust with powder sugar.
