They are his favourite! Jay likes them with less sugar and more oatmeal; we couldn’t agree more.
This recipe turned out really well. I will definitely be making these again. As usual, with us Carrol women it was a team effort.
Chewy Chocolate Chip Oatmeal Cookies
1 cup butter, soft
1 cup brown sugar
1/2 cup white sugar
2 eggs
2 tsp vanilla
1 1/4 cups flour
1/2 tsp baking soda
1 tsp salt
3 cups oatmeal (we used large flake and quick oats)
1 cup chocolate chips (we used milk and semi sweet)
Preheat oven to 325. Cream butter and surgars in a bowl. Add eggs and vanilla, mix well. Add all other ingredients and mix until combined.
Drop by teaspoon full onto a silicon or parchment lined baking sheet and bake for 8-10 minutes.
