Orecchiette with tomato, basil and garlic


This recipe is a new favourite of mine. It comes together quickly and easily and best of all it only uses a few ingredients. The key to this recipe is to use good quality ingredients! If you do so you will end up with an amazing dinner that is both fresh and complex tasting.

Orecchiette with tomato, basil and garlic

1 package orecchiette

1/2 cup olive oil

2 cloves garlic, minced

1 pint heirloom baby tomatoes (or cherry tomatoes), halved

1/2 cup fresh basil, sliced in ribbons

1/2 cup parmasean cheese, grated

Cook orecchiette in a large pot of salted boiling water until al dente, about 10-12 minutes. Drain and set aside.

Heat olive oil in a large pan over medium, once it is hot add the garlic and saute 1-2 minutes but do not let it brown. Add the tomatoes to the oil garlic mix. Stir, put a lid on the pan and take off the heat. Add the orecchiette to the oil and stir. Top with basil and parm, stir again and serve immediately.
